Pumpkin Spice Cookies

These pumpkin spice cookies are the perfect fall treat and are super easy to make. I like to use brown sugar in these cookies because it gives them a strong flavor and goes really well with the pumpkin spice.

Ingredients:

1 ¼ cup brown sugar, packed

½ cup butter, melted

1 large egg

1 tsp. vanilla extract

1 ½ cups all purpose flour

2 tsp. cornstarch

1 tbsp. pumpkin pie spice

1 tsp. baking soda

Instructions:

  1. Heat butter in a small bowl until fully melted.
  2. Mix butter and sugar together in a large bowl.
  3. Add egg and vanilla extract. Whisk until combined.
  4. Mix in flour, cornstarch, baking soda and pumpkin pie spice and fold until a dough forms.
  5. Chill the dough for 30 minutes and preheat the oven to 350º.
  6. Scoop dough onto a parchment paper–lined baking sheet.
  7. Bake for 10–12 minutes.
  8. Enjoy!
