Mint and chocolate is an iconic flavor combination. The fresh mint flavor coupled with the rich chocolate of the brownies is absolutely divine. So, naturally, mint frosting is the perfect addition to a classic recipe. Follow these simple steps for a delicious payoff! The mint brownies also freeze well and can be saved for later.

For the brownies:

  • Brownie mix and required ingredients

For the mint frosting:

  • 1 1/2 cups of confectioners sugar
  • 8 tbsp butter (1 stick)
  • 1 tbsp 2 percent milk
  • 1 tsp peppermint extract
  • 3 drops of green food dye

For the chocolate layer:

  • 8 tbsp butter (1 stick)
  • 1 cup of chocolate chips

Preparation:

  1. Make a basic brownie recipe and let chill for at least two hours in a 9×13 inch pan.
  2. In a medium sized bowl, use a hand mixer to combine the confectioners sugar and butter until smooth.
  3. Add the milk, peppermint extract and green food dye to the mixture and mix until combined.
  4. Spread the mint frosting on the brownies and refrigerate for at least two hours.
  5. Combine the butter and chocolate chips in a saucepan over medium heat for five minutes.
  6. Pour the chocolate sauce over the brownie and mint frosting and refrigerate for at least two hours, preferably overnight.

Yields about 16 brownies.
