Passover With a Twist: Matzo Crack

During Passover, which fell between April 1 and 9 this year, many Jews refrain from eating leavened bread and instead opt for matzo and other lackluster alternatives. When life gives you lemons, make lemonade! So make matzo crack, a layered dessert with chocolate and caramel. The dessert is a Passover substitute for millionaire’s shortbread. 

While Passover may be over, if you find yourself reminiscing about the holiday or are looking for a way to finish off those last few boxes of matzo in your cupboard, this recipe is the perfect solution. 

Ingredients: 

  • Matzo (enough to cover a baking pan)
  • 1 cup unsalted butter
  • 1 cup packed brown sugar
  • A pinch of flaky sea salt
  • ½ tsp. vanilla extract
  • 1 ½ cups chocolate chips (semisweet, bittersweet or a combination)
  • Optional add-ins of your choosing (extra flaky salt, white chocolate, peanut butter, marshmallows, nuts)

Directions:

  1. Heat oven to 350 degrees and line a baking pan with parchment paper on top of foil.
  2. Cover the pan with an even layer of matzo.
  3. Melt the butter and brown sugar together in a medium saucepan, whisking until the mixture boils. Continue whisking for three more minutes.
  4. Remove the caramel from the heat, and whisk in salt and vanilla extract.
  5. Spread the caramel evenly over the matzo in the pan.
  6. Bake for 13–15 minutes or until the caramel bubbles
  7. Sprinkle the chocolate chips and any additional add-ins on top, and let the matzo sit for five minutes so the heat can melt the chocolate. 
  8. Spread the topping evenly.
  9. Let the matzo cool. To speed up the process, place the matzo in the refrigerator or freezer.
  10. Cut and enjoy!
