Winter Recipes: Latkes

Now that Hanukkah has officially begun, my family and I are getting ready to make one of our favorite holiday dishes: latkes! My great-aunt’s recipe is a staple in my house, and it has been in my family for decades. Though there are many ways to make latkes, this recipe is simple and delicious. 

Ingredients: 

  • 4 large peeled potatoes 
  • 2 large eggs 
  • 1 finely chopped onion
  • ¼ tbsp. baking powder
  • 2 tsp. salt
  • 1 tsp. Pepper
  • ½-1 cup oil depending on the size of your pan 

Directions: 

  1. Grate potatoes using the grate blade on a food processor, then use a regular blade for four or five pulses. 
  2. Rinse potatoes to remove starch.
  3. Mix all ingredients except oil in a large bowl.
  4. Heat oil in a deep frying pan.
  5. Press potato mixture into a large, slotted spoon.
  6. Slide the latke into the oil. 
  7. When latkes become light brown on the edges, flip them over.
  8. Put latkes on a paper towel to absorb oil.
  9. Serve and enjoy!
