Peepshi

Candy Sushi, or Peepshi as my family calls it, is a long-standing tradition in our household. It is the first thing that comes to mind when preparing baked goods for any occasion. My family and I typically make 40 to 50 pieces, and they are often gone within two to three days. I have brought them to school for birthday parties and other events; everyone loves them. They are a simple, quick, delicious, sweet treat worth making at least once. Most importantly, they look classy.

Ingredients: 

  • 1 stick of salted butter
  • 10 oz bag of mini marshmallows (they melt quicker; you can also use larger marshmallows)
  • 6 cups Rice Krispies cereal
  • ⅓ of a Peep for each Peepshi 
  • 1 Swedish Fish or Trolli octopus per Peepshi 
  • 1 Airhead Extreme Strip per Peepshi or approx. ¼ Fruit by the Foot per Peepshi (enough to wrap around as if it were seaweed around each candy roll)

Instructions:

  1. Get a large wok or a deep frying pan, and melt a stick of butter in the pan.
  2. Once the butter is melted, add the entire bag of marshmallows, stir until melted, then immediately turn the stove off.
  3. Add six cups of Rice Krispies and stir until all Rice Krispies are coated with the butter and marshmallow mix.
  4. Line a pan with parchment paper and spray with butter-flavored cooking spray.
  5. Scoop marshmallow Rice Krispie mixture onto a parchment-covered pan and flatten out to desired thickness.
  6. Once cool (roughly 20-25 minutes), slice the Rice Krispie mixture into small rectangular pieces.
  7. Use a slightly oiled sharp knife to slice Peeps into thirds horizontally.
  8. Place one slice of a peep onto each Rice Krispie treat and then one Swedish Fish or Trolli Octopus above.
  9. Then, wrap an Air Head Extreme or Fruit by the Foot around it as if it were a slice of seaweed.
  10. Lastly, enjoy!
