Pumpkin chocolate chip cookies are a long-standing winter tradition in my household and are one of the first things I think of when it comes to wintertime. My family often doubles the recipe and freezes them to enjoy throughout the holiday season. It is a simple and delicious dessert for the wintertime.

Ingredients:

  • 1 stick of butter
  • 1 ½ cups of sugar
  • 1 cup canned pumpkin (not pumpkin pie mix)
  • 1 beaten egg
  • 1 tsp vanilla extract
  • 2 ½ cups flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp salt
  • 6 oz chocolate chips

Instructions:

  1. Preheat the oven to 350 degrees.
  2. Spray baking sheets with canola oil.
  3. Soften butter with sugar until fluffy, then add egg.
  4. Sift flour, then add baking soda, baking powder, cinnamon, nutmeg, vanilla and salt.
  5. Add butter mixture, pumpkin and chocolate chips.
  6. Form small mounds of batter and place them on cookie sheets.
