Chicken Caesar Salad

This chicken Caesar salad is a perfect weeknight dinner and only takes about 30 minutes to prepare. This dish is definitely nothing new, but it is always delicious and incredibly easy to make! I enjoy cooking the chicken in the air fryer, but feel free to cook it any way you’d like. The chicken’s simple seasonings make it extremely versatile, and this dish can be paired with any of your favorite sides.

Air-fryer chicken:

  • 3 chicken thighs
  • 1 tbsp. hot honey
  • 2 tbsp. olive oil

To taste:

  • Smoked paprika
  • Garlic powder
  • Onion powder
  • Italian seasoning
  • Red pepper flakes
  • Salt and pepper

Caesar dressing:

  • 1 small anchovy from the can
  • ½ cup mayonnaise
  • 1 tbsp. Dijon mustard
  • 1 tbsp. Worcestershire sauce
  • 1 garlic clove, minced
  • 1 tsp. olive oil
  • Lemon juice

Salad:

  • Romaine, cut and washed
  • Croutons
  • Parmesan cheese
  • Salt and pepper, to taste

Directions:

  1. Coat the chicken in olive oil, and rub seasonings into it. Set aside in the fridge.
  1. Meanwhile, prepare the dressing. Combine all the ingredients, and let it sit in the fridge while you make everything else.
  1. Place the chicken in the air fryer, skin side up, at 375º F for 15–18 minutes until the chicken reaches an internal temperature of 165° F.
  1. Toss romaine with dressing and top with chicken, croutons and parmesan.
  2. Enjoy!
