Strawberry Muffins

This is a recipe for strawberry muffins that I enjoy making on weekends for my family and myself. These are a perfect on-the-go breakfast or simply a way to satisfy your sweet tooth. Though this recipe is for strawberry muffins, you can replace the strawberries with any type of fruit you want! 

Ingredients

  • ½ cup milk
  • 2 eggs
  • 1 ½ tsp. of vanilla extract
  • 1 stick of butter
  • ¾ cup granulated sugar
  • 1 cup flour
  • ⅛ tsp. baking soda
  • 2 tsp. baking powder
  • 1–2 cups diced strawberries

Instructions

  1. Preheat the oven to 425 degrees.
  2. In a bowl, combine milk, eggs, vanilla, sugar and melted butter.
  3. In a separate bowl, mix flour, baking soda and baking powder, and slowly add to your wet ingredients.
  4. Dice strawberries and add to your batter.
  5. Scoop the batter into a muffin pan.
  6. Bake at 425 degrees for 13 minutes, then lower heat to 360 degrees for another 10 minutes.
  7. Enjoy!
